Recipe for Mini Donuts | Baby Cakes Chocolate Zucchini Mini Donuts
I bought a donut maker (Around $25). It seemed fun and is be a healthy alternative to the fried donuts. The donuts are so cute who could resist? The donut maker makes six mini donuts at a time. It comes with a maker, a cooling rack, a fork and a powdered sugar shaker.
Chocolate Zucchini Donuts (adapted from Baby Cakes Chocolate Donuts Recipe owner’s manual) [about 16-18 donuts]
Dry Ingredients:
3/4 cup white flour
1/2 cup wheat flour
1/2 cup unsweetened cocoa powder
1 tablespoon baking powder
1/2 cup powdered sugar
Wet Ingredients:
1 zucchini grated (about 1/3 cup)
1/4 cup vegetable oil
1/2 cup milk
1 teaspoon vanilla
1 large egg
Directions:
Wiped maker with a bit of canola oil on a paper towel. Mix wet and dry ingredients separately. Then combine the two mixtures. Place in a Ziploc bag and cut the tip. Push ingredients out into a round shape around the circle of the donut maker. Set timer for 4 minutes. Take out donuts add to a paper bag w/ some powdered sugar and shake them up! Then allow them to cool for a few minutes on the rack.
It was pretty fun. Little Cloud (That’s the meaning of her middle name) ate about 2-3 of these and she helped mixing it. Not everything stayed in the bowl though.
Also a note, it was hard to get everything out through the Ziploc bag towards the end so I just scooped there rest up w/ a spoon.
